Ilish (Hilsa) Paturi

Hilsa fish packed in banana leaf sheets

An authentic #bengalicuisine that is relished by all specially during the monsoons!

It can be prepared very easily and tastes heavenly!

Ingredients

4 pieces Ilish or Hilsa fish

2 tbsp Black mustard seeds

1 tbsp white mustard seeds

1/2 cup grated coconut

1/4 cup curd

4-6 green chilies

Mustard oil

2 tsp turmeric powder

Salt (as required)

Water (as required)

Procedure-

1. Wash the Hilsa/ilish fish pieces and the banana leaf .

2.Coat the fish pieces with salt and turmeric.

3.In a blender add black and white mustard seed, salt and 1spoon water and blend it. Then Add grated coconut (optional) , curd and little red chilli powder and blend to a smooth paste.

4 . Now pour the paste from the blender to a mixing bowl and add 5 tbsp mustard oil to it and give a good mix.

6.Add the fish pieces to it, make sure to cover both sides of the fish pieces with the gravy paste and keep it marinate for 15-20 mins.

7.In the mean time, cut the banana leaf in required shape so as to pack the fish without leakages.

8.Heat a pan and roast the cut banana sheets but remember not to over burn it.

9.Now take the cut sheets of leaf and put 2 tsp marinated paste on it. Then add a piece of fish  and add 1or 2 more tsp paste on the top. Add a green chili and a spoon of mustard oil . Wrap it up to make a packet so that the paste won’t be able to come out in any way from it.

10.Use a cotton thread or string to tie up the leaf firmly.

11.Now either steam the leaf packets on steamer or heat a pan ,add mustard oil and put the leaf packets on it. Then cover the lid.

Make sure to turn over the packet and cook both sides . It takes 10-15 minutes to cook it perfectly.

Serve with hot steamed rice ๐Ÿš

LOCKDOWN RECIPE 5 : KAMRANGA/STAR-FRUIT CHUTNEY

This is a sweet,sour and spicy Kamranga Chutney, made by my mom. It keeps well in the fridge for up to a week. Try out the recipe and I'm sure you'll love it๐Ÿ‘‡

Procedure-

1.Firstly wash the fruits, then cut its edges and slice them.Then Heat Mustard oil in a Kadhai/ Cooking pan.


2.Roast Coriander seeds,Cumin seeds and Dry red chilli, then crush them and keep it aside.


3. Add Panch phoran to the oil in Kadhai.Fry till brown and you get a nice aroma.
4.Now add the sliced star fruits . Then add 1tsp salt to it and mix well.Close the lid for the sometime.


5.Then add Jaggery (250 gm) , Red chilli powder (1/2tsp) and Turmeric (1/2 tsp) . Let it cook for 7-8 minutes.


6.Then add about 2 cups of water, close the lid and bring it to a boil . 


7. Check after 7-8 minutes if the star fruits are cooked properly . Then add the crushed masalas prepared and it's ready to serve.


* If you want to make aachar and store it for some days then do add some Vinegar to it.
* You can also add sugar if you don't have Jaggery at home.

3 INGREDIENT CHOCO LAVA MUG CAKE

This is one of my most favourite and easiest go-to recipes to satisfy my sweet tooth at any time of the day or even midnight! Also if you are craving for the Domino's choco lava cake , do try this recipe as it tastes exactly like that! It doesn't require any fancy ingredients and on top of that it requires very less time to make it. It is a no oven recipe but it can prepared within 5-6 minutes in a microwave. How cool is that? so without much ado, lets start with the recipe :)


Ingredients:

1. 0reo biscuit (120g)/1packet

2. Dairy milk 2 PACKETS

3. 1spoon milk +1/3 cup milk

Procedure:

1.Heat water in a container. Break the dairy milk into small pieces, take it in a small bowl and place the bowl on the hot water . Stir. Till the chocolate starts melting. Add 1 tbsp milk and stir again. Take the bowl off the hot water when the chocolate reaches a sticky consistency. Keep it aside.


2.Now, take the oreo biscuits into a mixer and grind then add 3/4th cup of milk and blend it till it reaches the proper consistency ( not too thick not too runny). Now take a cup and pour this batter and fill half of it. With a spoon add the melted chocolate in the center. 


3.Preheat a pan for 4-5 minutes. Place a stand inside it and keep the cup on the stand inside the preheated pan. Cover it with the lid. Now wait for 15 minutes and it's ready to dig in!

LOCKDOWN RECIPE 3 : 2 RECIPES USING MINT LEAVES


RECIPE 1 : MINT MARGARITA

INGREDIENTS REQUIRED

1.FRESH MINT - 1 CUP
2.ICE CUBES
3.SALT - 1/4 TSP
4.BLACK SALT- 1 TSP
5.SUGAR- 2-3 TSP
6.LEMON JUICE-4-5 TSP
7.7UP/SPRITE - 1  CUP OR AS PER THE MEASUREMENT OF YOUR SERVING GLASS
8.WATER-1/2 CUP

PROCEDURE TO MAKE MINT MARGARITA

1. IN A BLENDER ADD 1 CUP MINT LEAVES, SALT,BLACK SALT, LEMON JUICE,SUGAR AND CRUSHED ICE CUBES AND BLEND IT FOR 10-12 SECONDS.

2.THEN ADD ABOUT 1/2 CUP WATER AND BLEND AGAIN.

3.FILL YOUR SERVING GLASS WITH SPRITE/7 UP TILL  HALF OF THE GLASS.

4.THEN POUR THE MINT MIXTURE TILL THE GLASS IS FULL.

5.GARNISH WITH SOME FRESH MINT LEAVES OR SLICE OF LEMON AND ITS READY TO SERVE.



                             RECIPE 2: MINT CHUTNEY


INGREDIENTS REQUIRED


1.FRESH MINT - 1 CUP
2.CORIANDER LEAF-1CUP
3.GREEN CHILLI
4.CURD/YOGURT- 2-3 TSP
5.GINGER-GARLIC PASTE-1 TSP
6.CHAT MASALA-2 TSP
7.SALT A PINCH
8.SUGAR-1 TSP
9.LEMON JUICE-1 TSP


PROCEDURE TO MAKE MINT CORIANDER CHUTNEY


1. IN A BLENDER ADD 1 CUP MINT LEAVES,CORIANDER LEAF, SALT,CHAT MASALA, LEMON JUICE,SUGAR,1CHOPPED GREEN CHILLI AND GINGER GARLIC PASTE,1TSP WATER AND BLEND IT FOR 10-12 SECONDS.

2..THEN ADD TO IT 2-3 TSP CURD/YOGURT AND 2TSP WATER AND BLEND AGAIN TO MAKE A SMOOTH PASTE (FOR THICK PASTE ADD LESS WATER).YOU MAY KEEP IN REGRIGERATOR IF WANT TO STORE IT FOR 2-3 DAYS.

Twist to The Trending Dalgonacoffee

Dalgona coffee cake !

#Dalgonacoffee has taken over the internet since the lockdown and during this quarantine period experimenting with new and old easy recipes has really been enjoying for me !

So I tried this without looking at any recipes or videos using only 6 Ingredients-
1. All purpose flour or Maida 1 cup
2.Milk 2/3 cup or as required to make the batter (not too thick nor too flowy)
3. Sugar as per your taste
4. Coffee powder 1 tsp
5. Baking powder 1 tsp
6. Cooking oil 2-3 tsp
 And (Some cadbuary dairy milk crushed into pieces , which is totally optional).

Procedure in a nutshell-
Mix all the above ingredients in a small bowl.

Preheat a cooker or pan for 5-7 minutes. Then place the bowl on a stand and then cover the cooker or pan with lid. Check it with a toothpick after 20-25 minutes if it's done. And there you go,Trend with a twist!

LOCKDOWN RECIPE 1 Mango Semolina CAKE

MANGO SEMOLINA CAKE 

Eggless Mango Semolina Cake is a perfect Tea time snack or Dessert !

Easy to prepare with very few ingredients- 
2Mangoes,
1cup Semolina or Sooji,
1 cup Milk ,
Cardamon powder, 
Baking soda and baking powder.

FOLLOW THESE STEPS TO BAKE A CAKE WITHOUT OVEN

Step1- Add 1cup Sooji to the mixing bowl.To it add 1/2 cup milk, 1/2 tsp baking soda,1tsp baking powder.

Step 2- Then add the freshy squeezed Mango puree to it.

Step 3- Add cardamom powder for flavour.(If you have vanilla essence then you can add it too). Stir it to a batter.Add remaining 1/2 cup milk while stirring .

Step4- Preheat a cooker for 5-7 minutes.Then put the batter in the greased cake pan and transfer it to the cooker . Close lid and take out the whistle. Check after 15 minutes with a toothpick .

Also you can garnish with some dry fruits that may be available to you.
